Peanut Butter Pudding and Banana Parfait
Peanut butter and banana has always been a delicious combo, but this creamy dessert takes the famous flavour duo to a whole new level.

|⅓ cup (75 mL) granulated sugar|
|2 tbsp (30 mL) cornstarch|
|¼ tsp (1 mL) salt|
|2½ cups (625 mL) milk, preferably homogenized|
|½ cup (125 mL) natural smooth peanut butter|
|1 tsp (5 mL) vanilla|
|2 small bananas, ripe but firm|
|½ cup (125 mL) whipping cream|
|2 tsp (10 mL) granulated sugar|
|2 tbsp (30 mL) chopped peanuts, salted or unsalted|
In a medium saucepan, whisk together sugar, cornstarch and salt.
Gradually whisk in milk. Set over medium heat, stirring until mixture starts to bubble around the outside edges of pan, about 5 minutes. Whisk in peanut butter then stir until mixture boils, about 2 minutes. Remove from heat and stir in vanilla.
Divide half the pudding into four parfait glasses. Let stand to allow pudding to set slightly, about 10 minutes. Slice bananas and divide between glasses. Spoon remaining pudding mixture over bananas. Refrigerate until firm.
Whip cream with sugar until soft peaks form. Dollop on pudding then sprinkle with peanuts.
