Gluten-free no-bake Peanut and Cherry Energy Bites
This recipe could not be simpler to put together, yet makes healthy snacking quick and easy. These energy bites are packed with fibre, protein and healthy fats, with no added sugars, artificial sweeteners or gluten.
- Prep time: 10 minutes
- Freeze time: 1 hour
- Makes: 20 energy bites
Ingredients
Bites
1 cup (250 mL) dry roasted lightly seasoned peanuts |
1¼ cup (310 mL) dates, roughly chopped |
¼ cup (60 mL) dried cherries |
¼ cup (60 mL) natural peanut butter |
2 tsp (10 mL) ground flax seed |
½ cup (125 mL) freeze-dried cherries |
Directions
Add all ingredients into a food processor and pulse until the mixture is smooth and sticky.
Roll into 20 balls, set on a baking sheet lined with parchment paper and freeze for an hour before transferring to a freezer bag or container.
Store in the freezer or fridge, and pull a few out at a time for a quick snack.
Tip: You can change the dried fruit in this recipe, or even add chocolate to make them a little sweeter.
