Chocolate Gingerbread Energy Bites
Get ready for gingerbread to be your new favourite workout fuel-up! With peanuts, peanut butter and a touch of chocolatey goodness, what’s not to love about these energy-packed bites?
- Makes: 26 bites
|1 cup (250 mL) pitted packed Medjool dates, 10 to 12|
|1¼ to 1½ cups (300 to 375 mL) large flake oatmeal|
|½ cup (125 mL) peanut butter|
|⅓ cup (75 mL) peanuts|
|¼ cup (60 mL) hemp hearts or chia seeds|
|2 tbsp (30 mL) fancy molasses|
|2 tbsp (30 mL) finely grated peeled fresh ginger|
|¼ cup (60 mL) mini chocolate chips|
Place dates, 1¼ cups (300 mL) oatmeal, peanut butter, peanuts, hemp hearts or chia seeds, molasses and ginger in a food processor. Pulse, scraping sides, until completely blended and peanuts are chopped.
Turn into a bowl. Stir in chocolate chips and remaining oatmeal if mixture is sticky. Roll into bite-sized balls, measuring about 1 inch (2.5 cm) in diameter. Store in an airtight container in the fridge or freezer.
