Beef and Noodle Salad with Peanuts
You can eat it like a meal, or have it as a side. This beef and noodle salad will be sure to satisfy your taste buds!

Ingredients
Marinade
¼ cup (60 mL) fish sauce |
2 tbsp (30 mL) minced fresh ginger |
2 garlic cloves, finely chopped |
2 tbsp (30 mL) sugar |
Dressing
½ cup (125 mL) lemon juice |
6 tbsp (75 mL) water |
2 tbsp (30 mL) sugar |
6 tbsp (75 mL) fish sauce |
1 tsp (5 mL) chili flakes |
½ cup (125 mL) shallot, thinly sliced |
Salad
600 g (21 oz) beef filet |
200 g (7 oz) noodles or rice noodles |
2 green apples |
1 tsp (5 mL) oil |
mixed lettuce |
mint leaves, chopped |
1 cup (250 mL) roasted, salted peanuts, coarsely chopped |
Directions
In a bowl, mix fish sauce with ginger, garlic, soy sauce and sugar. Stir until the sugar is dissolved. Marinate beef in the sauce for about 30 minutes.
In a bowl, mix the lemon juice with water, sugar, fish sauce and chili flakes. Once sugar is dissolved, add shallots. Keep in the refrigerator until ready to serve.
Cook pasta or noodles in salted water for about 5 minutes or until al dente. Drain and rinse with cold water. Core apples, and cut into thin slices.
After the beef has marinated, preheat a grill or pan and add a teaspoon of oil. Place the beef in the pan, searing on all sides, then cover and lower the heat, allowing to cook for 15 minutes. Remove from heat and let cool slightly. Slice the beef and set aside.
In individual serving dishes, place mixed lettuce with apples, noodles and beef. Dress salad and add chopped peanuts just before serving.
