Cabbage Salad with Peanut Dressing
Who said nutritious food can’t be tasty? Not us! This yummy cabbage salad is topped with a delicious, protein-rich peanut dressing that will have your taste buds dancing.

- Serves: Makes 8 servings
|1 red cabbage|
|0.5 jicama (Mexican turnip)|
|10 radishes, sliced|
|4 green onions, finely chopped|
|½ cup (125 mL) roasted peanuts|
|1 tbsp (15 mL) fresh ginger, grated|
|¼ cup (60 mL) peanut butter|
|½ cup (125 mL) rice vinegar|
|⅓ cup (75 mL) soy sauce|
|¼ cup (60 mL) olive oil|
|salt and pepper|
Place the dressing ingredients in a jar with a lid, shake vigorously until they are integrated; set aside.
Cut the cabbage in half and slice it as thin as possible.
Peel turnip and cut it in thin strips.
In a bowl, mix the cabbage, turnip, radishes and onions, sprinkle with peanuts and pour in the dressing. Serve immediately.
