Cabbage Salad with Peanut Dressing
Who said nutritious food can’t be tasty? Not us! This yummy cabbage salad is topped with a delicious, protein-rich peanut dressing that will have your taste buds dancing.

Ingredients
Salad
1 red cabbage |
0.5 jicama (Mexican turnip) |
10 radishes, sliced |
4 green onions, finely chopped |
½ cup (125 mL) roasted peanuts |
Peanut dressing
1 tbsp (15 mL) fresh ginger, grated |
¼ cup (60 mL) peanut butter |
½ cup (125 mL) rice vinegar |
⅓ cup (75 mL) soy sauce |
¼ cup (60 mL) olive oil |
salt and pepper |
Directions
Place the dressing ingredients in a jar with a lid, shake vigorously until they are integrated; set aside.
Cut the cabbage in half and slice it as thin as possible.
Peel turnip and cut it in thin strips.
In a bowl, mix the cabbage, turnip, radishes and onions, sprinkle with peanuts and pour in the dressing. Serve immediately.
