Shrimp and Peanut Salad
This is a salad that eats like a meal! You’ll love the combination of peanuts and seafood with a splash of Asian flavours.

Ingredients
Salad
2 garlic cloves, minced |
¼ cup (60 mL) peanut oil |
3 tomatoes, in wedges |
⅓ cup (75 mL) chopped shallot |
1 green chili, chopped |
¼ cup (60 mL) fish sauce |
¼ cup (60 mL) lemon juice |
salt, to taste |
2 slices ginger |
2 cups (500 mL) water |
500 g peeled shrimp |
½ cup (125 mL) roasted, salted peanuts, chopped |
Directions
Stir-fry garlic in a thick skillet with oil, moving constantly to brown evenly. When it turns a nice golden color remove from heat, discard half the garlic and pour the other half and the oil in a bowl, allow to cool and add tomatoes, shallot, chili, fish sauce and lemon juice.
On the other hand, heat water in a saucepan, add sliced ginger and when the water boils add the shrimp, bring again to a boil and remove from heat. Drain shrimp and rinse with cold water. Add the shrimp to the bowl of tomatoes and add peanuts, stir well and serve immediately.
