Spinach Peanut and Apple Salad
This fresh spinach salad is packed with nutrition and crunch for a satisfying summer side dish.

Ingredients
Salad
1 lb (500 g) spinach leaves |
2 red apples |
⅓ cup (75 mL) roasted peanuts |
¼ cup (60 mL) sunflower seeds |
2 tbsp (30 mL) sesame seeds |
Dressing
⅓ cup (75 mL) peanut oil |
3 tbsp (45 mL) wine vinegar |
2 tsp (10 mL) Dijon mustard |
salt and pepper, to taste |
Directions
Shred the spinach, chop apples and combine in bowl with peanuts, sunflower seeds and sesame seeds.
In a small bowl, combine all dressing ingredients. Pour dressing over salad, then toss and serve.
