Spinach Peanut and Apple Salad
This fresh spinach salad is packed with nutrition and crunch for a satisfying summer side dish.

|1 lb (500 g) spinach leaves|
|2 red apples|
|⅓ cup (75 mL) roasted peanuts|
|¼ cup (60 mL) sunflower seeds|
|2 tbsp (30 mL) sesame seeds|
|⅓ cup (75 mL) peanut oil|
|3 tbsp (45 mL) wine vinegar|
|2 tsp (10 mL) Dijon mustard|
|salt and pepper, to taste|
Shred the spinach, chop apples and combine in bowl with peanuts, sunflower seeds and sesame seeds.
In a small bowl, combine all dressing ingredients. Pour dressing over salad, then toss and serve.
