Singapore-Style Noodles

The flavour-packed party that is Singapore-Style Noodles comes together super quickly! So, make sure you have all your ingredients chopped and ready before turning on the stove.

Ingredients

½ (454 g) package fresh Cantonese chow mein noodles
½ cup (125 mL) chicken broth
¼ cup (60 mL) peanut butter
1 tbsp (15 mL each soy sauce, sesame oil and hot chili garlic sauce or sriracha
2 tbsp (30 mL) peanut or vegetable oil, divided
2 eggs, lightly beaten

1 small onion, very thinly sliced
1 cup (250 mL) very thinly sliced Napa cabbage
1 cup (250 mL) carrots (matchstick-sized 2-inch (5 cm) pieces)
½ red pepper, cut into matchstick-sized 2-inch (5-cm) pieces
3 garlic cloves, minced
1 tbsp (15 mL) finely minced ginger
1 tbsp (15 mL) curry powder
1 cup (250 mL) cooked, peeled small shrimp, about 4 oz (125 g)
2 green onions, thinly sliced diagonally
2 tbsp (30 mL) chopped peanuts

Directions

Bring a large pot of salted water to a boil. Cook noodles, stirring to untangle, 2 minutes. Drain, then rinse under cold water until cold. Drain well. Meanwhile, whisk chicken broth with peanut butter, soy sauce, sesame oil and chili garlic sauce until combined. Set aside.

Set a large wide skillet over medium heat, and add 2 tsp (10 mL) oil to pan. Add beaten eggs and a pinch of salt to pan. Scramble eggs just until set, about 1 minute. Place on a plate.

Add remaining oil to pan and increase temperature to medium-high. Add onion, scraping up any excess egg, and stir-fry 1 minute. Add cabbage, carrot, red pepper and 2 tbsp (30 mL) water. Adjusting temperature as needed, stir-fry 2 minutes. Add garlic, ginger and a pinch of salt. Stir-fry 30 seconds.

Add noodles to pan, along with curry powder and generous pinches of salt. Stir-fry until vegetables and noodles are mostly mixed. Add chicken broth mixture, egg and shrimp, tossing until well combined and hot, about 2 minutes. Sprinkle with green onions and peanuts.
