Peanut Power Meatballs
This delicious spin on meatballs is reminiscent of the popular and irresistible peanut butter and burger combo. Full of protein, these meatballs are a tasty addition to a cocktail or dinner party.

Ingredients
Meatballs
1 lb (500 g) ground beef |
2 garlic cloves, minced |
¼ cup (60 mL) peanuts, chopped |
1 egg yolk |
¼ cup (60 mL) bread crumbs |
2 tbsp (30 mL) fresh parsley, chopped |
1 tbsp (15 mL) Worcestershire sauce |
salt and pepper, to taste |
1 tbsp (15 mL) olive oil |
Peanut BBQ Sauce
¼ cup (60 mL) smooth peanut butter |
1 cup (250 mL) barbecue sauce |
Directions
Meatballs:
In bowl, combine beef, garlic, peanuts, egg yolk, bread crumbs, parsley and Worcestershire sauce. Season with salt and pepper. Form into meatballs of your desired size.
In large skillet, heat olive oil. Brown the meatballs evenly by gently rolling them around the pan. Depending on size of meatballs, they may need to be finished in the oven at 450°F (230°C) until they are cooked through.
Peanut BBQ Sauce:
In small saucepan, combine peanut butter with barbecue sauce. Warm, stirring, until peanut butter is melted. Serve with meatballs.
