Chili 'n' Nut Marinade
This versatile marinade goes great with chicken, shrimp, tofu, and any other meat that needs spicing up! Use it immediately or as a marinade for up to 24 hours.

- Serves: Makes enough marinade for a serving for 4 people
Ingredients
Marinade
1-in (2.5-cm) piece of ginger, peeled and crushed |
2 garlic cloves, crushed |
2 tsp (10 mL) red chili powder |
1 tbsp (15 mL) peanut oil |
1 tbsp (15 mL) honey |
2 tsp (10 mL) dijon mustard |
¼ cup (60 mL) peanut butter |
2 tbsp (30 mL) light soy sauce |
1 tbsp (15 mL) coriander leaves, finely chopped |
⅓ cup (75 mL) cold water |
Directions
Mix all the ingredients together and brush over your favourite meat, fish, tofu or vegetables.
Cook on the grill, on the stovetop non-stick pan, or in the oven, depending on the protein chosen.
Tip: This easy marinade can be made in advance and frozen in bulk. Simply defrost and stir well before using. For extra texture, add chopped peanuts into the marinade too!
