Chili 'n' Nut Marinade
This versatile marinade goes great with chicken, shrimp, tofu, and any other meat that needs spicing up! Use it immediately or as a marinade for up to 24 hours.
- Cooking time: 5 minutes
- Serves: Makes enough marinade for a serving for 4 people
|1-in (2.5-cm) piece of ginger, peeled and crushed|
|2 garlic cloves, crushed|
|2 tsp (10 mL) red chili powder|
|1 tbsp (15 mL) peanut oil|
|1 tbsp (15 mL) honey|
|2 tsp (10 mL) dijon mustard|
|¼ cup (60 mL) peanut butter|
|2 tbsp (30 mL) light soy sauce|
|1 tbsp (15 mL) coriander leaves, finely chopped|
|⅓ cup (75 mL) cold water|
Mix all the ingredients together and brush over your favourite meat, fish, tofu or vegetables.
Cook on the grill, on the stovetop non-stick pan, or in the oven, depending on the protein chosen.
Tip: This easy marinade can be made in advance and frozen in bulk. Simply defrost and stir well before using. For extra texture, add chopped peanuts into the marinade too!
