Chili and Peanut Marinade

This versatile marinade goes great with chicken, shrimp, tofu, and any other meat that needs spicing up! Use it immediately or as a marinade for up to 24 hours.

  • Cooking time: 5 minutes
  • Serves: Makes enough marinade for a serving for 4 people

1-in (2.5-cm) piece of ginger, peeled and crushed
2 garlic cloves, crushed
2 tsp (10 mL) red chili powder
1 tbsp (15 mL) peanut oil
1 tbsp (15 mL) honey
2 tsp (10 mL) dijon mustard
¼ cup (60 mL) peanut butter
2 tbsp (30 mL) light soy sauce
1 tbsp (15 mL) coriander leaves, finely chopped
⅓ cup (75 mL) cold water

Mix all the ingredients together and brush over your favourite meat, fish, tofu or vegetables.

Cook on the grill, on the stovetop non-stick pan, or in the oven, depending on the protein chosen.

This easy marinade can be made in advance and frozen in bulk. Simply defrost and stir well before using. For extra texture, add chopped peanuts into the marinade too!
