Peanut Caramel Sauce

This decadent caramel sauce is a perfect gift from the kitchen. Package a homemade jar with an ice cream and the recipe - if you're willing to share your secret!

  • Cooking time: 17 minutes
  • Serves: Makes 2 cups

Ingredients

Sauce

1 cup (250 mL) granulated sugar
3 tbsp (45 mL) water
a couple of drops of lemon juice
1 cup (250 mL) whipping cream
⅓ cup (75 mL) smooth peanut butter
1 tsp (5 mL) vanilla

Directions

Place sugar, water and lemon juice in a medium saucepan set over medium heat. Stir just until sugar melts. Boil until sauce turns a deep golden brown, 5 to 7 minutes. Be careful not to stir while the sauce is boiling, instead swirl the saucepan occasionally. Remove from heat and add whipping cream. Mixture will bubble vigorously.

Return saucepan to low heat and stir to dissolve any hardened caramel. Whisk in peanut butter until sauce is smooth, then stir in vanilla. Remove from heat and let cool slightly before pouring into an airtight container. Refrigerate up to 1 week.

Tip: For a thicker sauce serve right from the fridge or warm for a runnier sauce.
