Spiced Peanut Butter Bundt Cake
This comforting spiced peanut butter bundt cake is the perfect mid-day snack and tasty way to end a family dinner. Either way, it’s tasty and full of fibre.

Ingredients
Cake
3 cups (750 mL) flour |
3 cups (750 mL) sugar |
1 tsp (5 mL) baking powder |
1 tsp (5 mL) cinnamon |
1 tsp (5 mL) nutmeg |
½ tsp (2 mL) powdered ginger |
½ tsp (2 mL) baking soda |
½ tsp (2 mL) salt |
½ cup (125 mL) creamy peanut butter |
3 eggs |
¾ cup (180 mL) cooking oil |
2 cups (500 mL) grated pumpkin |
½ cup (125 mL) peanuts, chopped |
Directions
Preheat oven to 180°C.
In a bowl, mix first eight ingredients. In another bowl, mix peanut butter with the eggs and oil, add the spice mixture until incorporated, add the pumpkin and chopped peanuts; pour mixture into a pre-greased and floured bread pan.
Bake for 1 hour and 15 minutes or until an inserted toothpick comes out clean. Let cool before removing from pan. Garnish with chopped peanuts.
